For the samosas:
- 10 Samosa wrappers
- 1/4 Onion (sliced)
- 1 Garlic clove
- 1 tbsp Yellow curry powder
- 1/2 tsp Cinnamon (ground)
- 1/2 tsp Turmeric
- 1/2 lb. Chicken breast
- 1/2 cup Chicken stock
For the cilantro dip:
- 1 cup Cilantro (fresh)
- 1 Lemon (juiced)
- 1 Green serrano pepper
- 2 tbsp Onion (minced)
- 1 Garlic clove
- Salt and pepper (to taste)
- Olive oil (as needed)
Boil chicken breast until cooked. Shred and set aside, and keep stock.
In a skillet, heat 2 tablespoons of olive oil. Sauté onion and garlic until fragrant.
Add curry powder, turmeric, and cinnamon. Mix well with chicken.
Pour chicken stock, reduce until thick (10-15 mins). Add salt and pepper.
Let chicken stew cool. Scoop onto samosa wrappers, and fold them into triangles.
Oil should be heated to 1 inch in a skillet. Fry the samosas until they become crispy.
Make cilantro dip: pulse cilantro, lemon juice, green pepper, onion, garlic.
Season dip with salt. Serve with samosas. Enjoy!
