Blend chipotle peppers until smooth in a food processor.
Cut cheese into small cubes and place in a large pot.
Add half and half, water, cumin, and blended chipotle peppers to the pot.
Melt cheese over medium-low heat, stirring often for even melting.
Dice onion, tomatoes, cilantro, and jalapeno (seeds removed).
Mix chopped ingredients in a bowl, add lime juice, and blend.
Once the cheese is fully melted, add mixed ingredients and stir well.
Taste queso, and add salt to your liking. Serve with your favorite chips for dipping.
