Ingredients
  

  • 1 ½ pounds  White American Cheese
  • ¾ cup Half and Half
  • cup Water
  • 1 ½ teaspoons Ground Cumin
  • 1 ½ tablespoons Canned Chipotle Peppers
  • ¾  White Onion (Chopped)
  • Roma Tomatoes (Chopped)
  • 2 tablespoons  Cilantro (Chopped)
  • Salt To Taste
  • ½  Jalapeno Pepper (Seeds Removed)
  • 1 tablespoon Lime Juice

Instructions
 

  • Blend chipotle peppers until smooth in a food processor.
  • Cut cheese into small cubes and place in a large pot.
  • Add half and half, water, cumin, and blended chipotle peppers to the pot.
  • Melt cheese over medium-low heat, stirring often for even melting.
  • Dice onion, tomatoes, cilantro, and jalapeno (seeds removed).
  • Mix chopped ingredients in a bowl, add lime juice, and blend.
  • Once the cheese is fully melted, add mixed ingredients and stir well.
  • Taste queso, and add salt to your liking. Serve with your favorite chips for dipping.

Notes

  • Use good cheese for creaminess.
  • Melt cheese on low, and stir well.
  • Adjust spiciness as you like.
  • Keep the texture smooth with Half and Half.
  • Fresh ingredients equal better taste.
  • Go easy on the lime juice.
  • Taste before salting.
