- 4 cups Mayonnaise
- 4 teaspoon Dijon Mustard
- 8 lbs Shrimp
- 2 teaspoon kosher salt
- 1 teaspoon Ground Black Pepper (coarse)
- 6 stalks Celery (minced)
- 2 Red Onion (chopped)
- 4 tablespoon White Wine Vinegar
- 2 Lemons (cut into quarters)
- 4 tablespoon Dill
Boil salted water in a large pot.
Cook shrimp until pink and firm, about 5 minutes.
Drain shrimp, and chop into bite-sized pieces.
In a bowl, combine celery, red onion, mayo, vinegar, lemon, mustard, and pepper.
Add shrimp, and stir until coated. Add dill, and adjust the seasoning.
Serve chilled or at room temp with crackers, chips, or veggies.
