  • 1/4 cup Salt Pork (finely chopped)
  • 1/2 pound Smoked Sausage
  • 3/4 cup Celery (chopped)
  • 3 Bay Leaves
  • 1 pound Pinto Beans (dried)
  • 3/4 cup  Green Bell Pepper (chopped)
  • 1 pinch Chipotle Chili Powder
  • 1 pinch Freshly Ground Black Pepper
  • 2 tablespoons  Fresh Thyme (finely chopped)
  • 3 tablespoons Bacon Grease
  • 2 tablespoons Fresh Parsley (chopped)
  • 2 tablespoons Garlic (finely chopped)
  • Water (as needed to achieve desired consistency)

Instructions
 

  • Begin by placing dried beans in a bowl with water to soak.
  • Grab a frying pan and heat up the oven to 350 degrees.
  • In that pan, combine onion, celery, bell pepper, black pepper, and chipotle powder with pork and bacon grease.
  • Stir until veggies soften, around 4 minutes.
  • Add garlic to the mix, creating a flavorful gravy.
  • Transfer soaked beans and gravy to a pan.
  • Next, Add water as needed and cover the pan.
  • Now, Cook on high heat for 1 hour, then reduce to low for 6 more hours.
  • Gently mash a portion of the beans with a spoon.
  • Cook for an additional 20 minutes, then remove bay leaves.
  • Your delicious pinto bean recipe is ready to serve. Enjoy!
